  • Elbow pasta
  • Butter
  • All-purpose flour
  • Unsweetened almond milk or 1% dairy milk
  • Garlic cloves
  • Sharp cheddar cheese
  • Salt
  • Pepper
  • Panko bread crumbs
  • Parmesan cheese
  • Olive oil spray
  • Parsley (optional)

The almond milk makes this mac and cheese creamy, but you can use any unsweetened milk you have on hand.

How to Make Homemade Mac and Cheese

I’ve made a lot of Mac n cheese recipes! All 4 of my cookbooks have Mac and cheese recipe… I’ve even made my Taco Mac and Cheese with Rachael Ray! (Really! Video below!!)

This recipe Mac and cheese best represents all of my recipes for the dish… It’s the creamiest Mac and cheese, without all of the calories of traditional recipe. Plus… I didn’t use any “weird” ingredients to make this baked Mac and cheese easy, I used whole ingredients to do so.

Healthy Mac and Cheese Recipe

I make mac and cheese homemade easy recipes low calorie so that you can curb your cravings without ruining your diet.

How to Make Mac and Cheese:

  1. Cook the pasta according to the directions on the box. Drain and set aside.
  2. In a large pan, melt the butter over medium-low heat. Add the flour and mix with a wooden spoon, continuously, until you have a light brown paste.
  3. Add in 1 cup of milk and whisk well to remove any lumps. Mix the remaining milk and whole garlic cloves. Increase the heat to medium-high. Mix often, scraping the bottom of the pan often, until the sauce has thickened and coats the spoon. Turn off the heat, remove the garlic cloves and discard.
  4. Stir in the cooked pasta, cheddar cheese, salt and pepper. Mix well, until all the pasta is coated and the cheese is melted.
  5. Move to a casserole dish, or a cast iron skillet, and top with breadcrumbs and parmesan cheese. Spray lightly with olive oil and broil for 2-5 minutes until the topping is golden brown. Remove from the oven, sprinkle with parsley, and serve.

I make this Mac and cheese recipe easy by prepping it the night before, or in my weekly meal prep.

I don’t bake it when I prep it, I just cover with foil and place in the fridge. Then I reheat it at 375 degrees for 20 minutes with the foil on, remove the foil and broil as instructed.
